The SG ( specific gravity ) measures the sugar density of the wash and is the key to maximum yield, it has to be taken into account when fermenting.
The SG tells you when all of the sugar has been fermented to Alcohol
Additionally, the starting SG reading should be around 1070 or more depending on the quantity of added sugar (6 KGS – 8 KGS difference).
Yeast manufactures will have there own advise as to quantity of sugar.
However, the finished SG should be 980-990.
This is why I consider the hydrometer the most important instrument as it takes the guess work out of distilling ,
Should you NOT achieve this 980- 990 SG you will need to slightly reduce the sugar quantity It is far better to arrive at correct SG
Check the accurately in water should read 1000 SG (the black line)
Trivia: Salt water has a SG of 1023
